Steakhouse Molasses Bread

Bread: Soup/Side  Prep Time: 30 minutes  Rise Time: 90 mins first time, 60 min 2nd time  Bake Time: 30 min

1 cup warm water
1 Tablespoon active dry yeast
1 Tablespoon of sugar
1 3/4 cup of wheat flour
1 egg
2 Tablespoons of room temp butter
2 Tablespoons of molasses
1/4 cup of honey
2 cups of bread flour (we used AP unbleached because that's what we had on hand)
1 Tablespoon natural (unsweetened) baking cocoa
1 teaspoon of salt

*Optional is an egg for an egg wash and quick oats for a pretty topping


Place 1 cup of warm water, 1 TBSP of active dry yeast, and 1 TBSP of sugar in a stand mixer with bread dough attachment.  Let it sit for 10 minutes until foamy.
Add in 1 3/4 cup of wheat flour, 1 egg, 2 TBSP room temp butter, 2 TBSP of molasses and 1/4 cup of honey.  Mix on low
Add in 1 of the 2 cups of flour, 1 TBSP natural baking cocoa and 1 tsp of salt. Mix until combined on low
Add in the remaining 1 cup of flour until the dough starts to stick to itself.  Kneed on low for 10 min until the dough ball is shiny and elastic
Remove dough ball and place into a bowl, covered and in a warm place to rice for 60-90 min
After the first rise, split the ball in half and shape into two loaves.  Let it rise for another 60 min.
Crack  the 2nd egg and mix with a fork, paint all over the loaves with a pastry brush.  Sprinkle on quick oats and they will stick to the egg wash.
Bake at 350º for 27-30 min.

Serve warm with butter and enjoy1
