Maryland Crab Cakes

Maryland Crabcakes

makes four crab cakes

  • 1/3 cup bread crumbs
  • 1 T. chopped parsley
  • 1 T. Worcestershire sauce
  • 1 T. Dijon mustard
  • 1 t. Old Bay seasoning
  • 1 egg
  • 3 T. mayonnaise
  • 1 pound lump crabmeat
  • 1 T butter and/or 1 T. olive oil

Mix all ingredients together (except crabmeat and butter and/or oil) with a fork, blending well. Stir in the crabmeat, being careful not to break the large pieces. Using your hands, mix the crabmeat with the filling, only enough to blend the ingredients together. Shape into four patties and put in the refrigerator at least an hour. You can even do this the night before and they will hold their shape even better. Saute in a little butter and olive oil until golden brown on one side, then gently flip and brown the other side.
