Gourmet Mac and Cheese

Gourmet Mac and Cheese

1 pound elbow macaroni

1/4 cup butter

1/2 cup chopped onion

1/4 cup flour

4 cups whole milk

2 t. Dijon mustard

1 t. Worcestershire sauce

1 t. hot pepper sauce

1 cup grated Jack cheese

1 1/2 cup grated Point Reyes Vintage White Cheddar cheese

3/4 cup (about 6 ounces) Original Blue cheese crumbles

salt and pepper to taste

Cook the macaroni al dente. Drain well and set aside. While the macaroni is cooking, melt the butter and saute the onion until soft. Stir in flour and cook until mixture is smooth. Whisk in milk and simmer until the mixture thickens slightly. Add the mustard, Worcestershire, pepper sauce, and all the cheese. Stir to melt. Add salt and pepper to taste. Mix the sauce with the cooked macaroni and pour into a 9 x 13 inch baking pan. Cover with foil and bake in 350 degree F. oven for 20 minutes. Remove foil and return to oven for 10 minutes. Let stand 5 minutes.
