Sameena's Chickpea Mango Salad

1 19 oz can of chickpeas, drained and rinsed

1/2 cup diced mangoes

1/4 cup chopped red onion

1/2 cup red pepper, chopped

1/2 cup green pepper, chopped

1 jalapeno, seeded and diced


Dressing:

2 tbsp lemon juice

1 1/2 tbsp olive oil

1/4 tsp garlic powder

1/2 tsp cumin powder

2 tsp apple cider vinegar

1 tbsp cilantro, minced

salt, to taste


Combine the salad.

Puree the dressing and pour over the salad.  Let marinate for at least 1/2 hour.
