Pasta with Tomato Cream Sauce

Adapted from The Pioneer Woman

2 tbsp olive oil

1/2 medium onion, finely diced

3 cloves garlic, minced

1 x 398 ml can of tomato sauce

salt and freshly ground pepper to taste

pinch of sugar

1/2 cup sour cream

Parmesan (optional)

Fresh Basil, chopped

1 lb of Fettuccine or 4 cups of Rotini 1/2 lb Fettuccine or any other pasta

Cook pasta according to package directions.  Reserve 1/2 cup of the pasta water before draining.

Heat oil over medium heat.  Add onions and garlic and fry until soft and translucent.  Add tomato sauce, salt, pepper and sugar.  Mix and cook over low heat for about 25-30 minutes stirring occasionally.

Remove from heat and stir in sour cream.  Add Parmesan and check seasoning.  Pour desired amount of sauce over pasta.  If needed thin pasta with the reserved water.  Stir in chopped basil.  Enjoy!
