Traditional Posole

Posole has been enjoyed in 
New Mexico for longer than anyone can remember.  There are as many "traditional" recipes for Posole as there are families in Northern New Mexico -- this is one of our favorites!  A vegetarian option is included:

This posole was made with powdered green chili and served with avocado!

Cook the Posole with the pork meat and rind in the stock until the kernels burst, then season to taste with salt, garlic, chile and lime.

If you are preparing the vegetarian version you may use  your favorite vegetable or meat substitute.

Serving suggestion: Serve in a bowl with some shredded cheese sprinkled on top. Add a fresh lime wedge and a warm tortilla on the side!
