A cookbook that helped to feed a family of six healthy, happy people. I am so deeply blessed to have grown up with a mom who feed me whole foods and thus passed on her love of feeling alive and healthy! From the inscription in the book: "Dear Rineke In the past two years my understanding of persons who cook without meat and my appreciation for their meals has increased 100 fold. My own diet has changed dramatically. In 1982 I met a single man who prepared nutritious and sumptuous meals for one person - himself. Utilizing two Christmas gifts (the Real Food Daily Cookbook and a stellar Williams Sonoma loaf pan) I made this tempeh loaf and I'm very excited to say that it was great. Tempeh is one of those foods that I feel I should eat more of, but it can be a challenge because on the whole, I'm not super into it though I know it's a highly nutritious food that would be a good thing to work into my diet more. I think this loaf will do the trick. Yum. And with garlic green beans and mashed potatoes...a perfect meal for a cold New England winter night...except that it's been in the mid and upper 60s here. Oh well, perfect comfort meal for anytime of year.
