Sesame Honey Chicken (Soy and Gluten Free )

For this recipe you will need...

1 1/2 to 2 pounds of boneless skinless chicken breasts
1 cup honey (you can also use brown sugar if you like but only use 1/2 cup of that)
1/2 cup rice vinegar or apple cider vinegar
2 cloves crushed garlic
salt and pepper to taste
1 tsp red pepper flakes
1 Tbsp sesame seeds
4 Tbsp tapioca starch

1.   Cut chicken breasts into 1 inch cubes (not exact... just bite sized pieces)
2.  Add chicken to crock pot or oven baking dish depending on how you are cooking it.
3.   Add your salt, pepper, garlic, red pepper flakes, and tapioca starch to the chicken and toss to incorporate.
4.    Mix your honey and rice or apple cider vinegar together and pour over the top.  
5.  Put lid on and either put your crockpot on low to cook for about 4 hours or place baking dish with lid on it into the oven and bake on 300 to 325 degrees and bake until done (about 2 hours or longer depending on the done-ness you want).
6.  Garnish at the very end with sesame seeds and then salt and pepper to taste.

Serving suggestions:

I serve this over a bed of Jasmine or Basmati rice with stir fried veggies and maybe a salad.
