Stir Fry Chicken with Chayote

Makes 8 servings

Prep Time 30 Minutes

1 lb chicken breast

2 medium chayote squash

2 tablespoons canola oil (Divided) 1 tablespoon to stir fry the chicken. 1 tablespoon to saute chayote squash.

1 tablespoon chopped garlic

2 1/2 tablespoon black bean garlic sauce

1/2 tablespoon sugar

1 teaspoon baking soda

Marinate sliced chicken in 1 teaspoon baking soda for 15 minutes

The Baking Soda is only used to add a unique texture and brighten the chicken. You must remove the baking soda by rinsing the chicken thoroughly prior to cooking.
