Red cabbage soup
Soup/entre/red cabbage soup

Ingredients:

 

Red cabbage: ½ head shredded

Medium size potato: 2 num- peeled and diced into cubes

Onion: small one, diced

Cumin powder: 1 tsp

Ginger: 1 tsp grated

Salt: according ur taste

Olive oil: 1 tsp

 

Garnish and Flavoring:

Sour cream: few dollops

Cilantro leaves: minced finely

Freshly ground Black pepper

 

Method:

 

I did the soup in my pressure cooker. You can use a big pot if you don’t have a pressure cooker.

 

Heat the oil, saute the onion add the cabbage and potato . Pour about less than 2 cups of water, season with cumin powder and close the lid.

Pressure in high flame , switch off after 2 whistles. Once the pressure is realeased completely, open the lid and with hand blender, make a fine puree.

Adjust the salt, serve in bowl add a dollop of sour cream, cilantro and some more cumin powder, black pepper.

Enjoy this creamy purple soup.
