Pate Brisee(Pie Dough)

2 1/2 cups flour
1 tsp. salt
1 tsp. sugar
1 cup (2 sticks) unsalted butter, cut into cubes and chilled
1/4-1/2 cup ice water
 
In a food processor, combine flour, salt, and sugar.  Pulse to blend.  Add the butter and pulse until it resembles coarse crumbs.  While pulsing begin to add the ice water slowly.  Add only enough to make the dough stick together when pressed with your hand.  Divide dough in half and wrap with plastic wrap and chill for at least 1 hour. 
 
Yield: enough for 1 double pie or 2- 9"-10" pies
