CPK General Manager Brady Thomason gave me a tour to their kitchen this week and I was very impressed. Last year, CPK was accredited with a Gluten-Free Food Service Training and Management Certification Program (GFFS) by the Gluten Intolerance Group (GIG). Their GF pizza crusts are GF Certified by GIG, and they limit cross-contamination during procurement, processing, storage, all aspects of preparation, and much more.


And did you know that CPK avoids having wheat flour in the air? They don’t use wheat flour in their stations. When gluten-containing foods (prepared separately) are sprinkled with flour, they use rice flour. Please read further details here


Brady has enthusiastically offered to give our group a tour to their dedicated GF pizza preparation area. This is a great opportunity to see face-to-face how CPK restaurants have been trained to accommodate guests diagnosed with Celiac Disease (CD) and Non-celiac Gluten Sensitivity (NCGS). Every year I like to share with new members why September 13th is Celiac Awareness Day. September 13th was chosen because it is Dr. Samuel Gee’s Birthday (1839-1911), a pediatrician from London, England, and the first physician to link CD to the need to follow of a diet in 1887. All of us can help spread Celiac Disease (CD) awareness and Non-Celiac Gluten Sensitivity (NCGS) simply by attending our meetings. Our presence always helps send the message that CD and gluten intolerances are common, and commonly undiagnosed.


Guided Store Tour - Gluten free food shopping seems overwhelming to most newly diagnosed, and we can reassure you that GF shopping gets better and easier with practice. Save precious time and make sure you are not limiting yourself more than you should by getting well informed. Join our group for great tips on how to expand your GF choices, learning what you need to know about reading labels properly and thoroughly. You may be surprised how much there is to cover, and how much easier it is to remember everything when touring a large store together. Along the way, we will be sharing important information regarding the FDA labeling rule passed on August 2nd 2013 and how to interpret it (i.e., what’s covered, what’s not).


The most interesting information and updates from the 15th International Celiac Disease Symposium in Chicago, attended by Isabella, were shared.
