S'mores Cookie Cake Bars (Gluten-Free, Dairy-Free, Refined Sugar-Free)

Prep Time: 10 minutes. Cook time: 20 minutes. Total time: 30 minutes.

Yields: 8x8" or 9x9" pan; 9-12 bars


1/4 cup coconut oil, melted and cooled

1/3 cup pure maple syrup

2 teaspoons vanilla extract

2 eggs, room temperature

1/4 cup milk (rice or almond if needing dairy free)

1/2 cup coconut flour

1/2 teaspoon baking soda

1/3-1/2 cup dark chocolate chips

1 cup mini marshmallows


1. Preheat oven to 350 degrees. Spray an 8x8" or 9x9" pan with cooking spray. Set aside.

2. In a medium bowl, whisk together coconut oil, maple syrup, vanilla, eggs and milk until thoroughly combined. Slowly add in flour and baking soda and mix until just combined. The dough will be sticky.

3. Press 2/3 of dough into prepared pan and top evenly with chocolate chips. Evenly sprinkle with marshmallows, and finish by dolloping remaining 1/3 of batter over the top and gently pressing down.

4. Bake for 20-25 minutes until edges are golden brown, a toothpick inserted in the center comes out clean and marshmallows begin to brown. Remove from oven and let cool at least 10 minutes before cutting and serving. Cover and store leftovers at room temperature. Best if eaten within a couple days.
