Oat & Jam Bars

Prep Time: 10 minutes. Cook time: 30 minutes. Total time: 40 minutes.

Yields: 8x8 pan; 9-12 bars


Ingredients:


1/2 cup coconut oil, melted

1 1/2 cups old-fashioned/rolled oats

1 cup whole wheat flour

2 tablespoons brown sugar

1/2 teaspoon cinnamon

1 egg

1 cup fruit jam (peach, raspberry, strawberry, blackberry, etc.)



Directions:


1. Preheat oven to 350 degrees. Spray an 8x8" or 9x9" pan with cooking spray. Set aside.


2. In a medium bowl, mix all ingredients besides jam until thoroughly combined. Firmly press about 2/3 of mixture into pan. Bake 10 minutes.



3. Remove from oven and evenly spread jam on top. Using your fingers, pinch and clump together remaining oat mixture and sprinkle over jam. Gently and carefully (the pan will be hot!) press into jam mixture. Bake again 20-25 minutes until golden brown and bubbly. 


4. Remove from oven and let cool at least 20 minutes before cutting and serving. Serve warm or room temperature. Cover and store leftovers at room temperature.
