Black Bean Almond Butter Brownies

Prep Time: 10 minutes. Cook time: 18 minutes. Total time: 28 minutes.

Yields: 8x8 or 9x9 pan; 9 brownies

Ingredients:

15 oz. can black beans, well rinsed and drained

2 tablespoons unsweetened cocoa powder

1/2 cup old-fashioned/rolled oats

1/2 cup pure maple syrup (or pure raw honey, but this will alter the taste)

1 tablespoon vanilla

1/4 cup almond butter

1 teaspoon baking powder

1/2 - 2/3 cup dark chocolate chips (2-2.5 ounces if chopping dark chocolate bar)

Directions:

1. Preheat oven to 350 degrees. Spray an 8x8 or 9x9 pan with cooking spray. Set aside.

2. In a food processor or blender, combine all ingredients except chocolate chips. Blend extremely well until very smooth and uniform. (I blended about 60-90 seconds on medium-high speed).

3. Stir in chocolate chips. Pour into prepared pan and spread evenly. Bake for 15-20 minutes until the sides begin to pull away and a toothpick inserted in the center comes out clean. Let cool at least 10 minutes before cutting and serving.

Enjoy!
