Apple Crisp

Prep Time: 45 minutes. Cook time: 35 minutes. Total time: 35 minutes.

Yields: 12 servings 

Ingredients:

For apple layer:

*6-8 medium apples 

2 tablespoons brown sugar

1 teaspoon cinnamon


For crisp layer:

2 cups brown sugar

2 cups old fashioned oats (or quick oats)

1 cup flour

1 cup butter, softened

1 teaspoon cinnamon

Ice cream, for topping (Optional)


*I used a mix of Gala and Golden Delicious. I think Honeycrisp would work, too.


Directions:

1. Preheat oven to 350 degrees. Grease a 9 x 13 pan and set aside.

2. Use an apple cutter to slice apples, then peel them. Cut each slice the way you would like (chunks, tid bits, slivers). I cut each slice length-wise twice to make long, thin slices.


3. Place apple slices in a plastic baggie. Add brown sugar and cinnamon. Toss and mix until apples are coated.

4. In a bowl, combine brown sugar, oats, flour and cinnamon. Cut in butter and stir until the mix becomes dough-y, with no loose flour mixture. I used my hands to combine, which I thought was much easier than using a spoon or fork. 

5. Take half of crisp mixture and press in the bottom of the pan until it's covered. Dump and spread apple layer evenly on top. Take remaining half of crisp mixture and sprinkle it over the apples, covering it as much as possible. 

6. Bake for about 35 minutes until edges are bubbling.

7. Allow to cool at least 5 minutes before cutting and serving.
