Baked Shrimp Po' Boys


for the shrimp:

-1 1/2 lbs frozen shrimp, thawed and tails removed
-2 cups breadcrumb mixture (I used 1c Panko and 1c plain, but feel free to use whatever you like)
-1 Tbsp Old Bay seasoning
-1/8 tsp cayenne pepper (optional)
-1 egg, beaten

for the Sriracha Mayo:

-3/4 cup Mayo
-2 Tbsp Sriracha hot sauce
-1 tsp Old Bay seasoning

for the sandwiches:

-prepared shrimp (above)
-Sriracha Mayo recipe (above)
-1 beefsteak tomato, finely chopped
-romain lettuce (roughly 1/2 cup chopped lettuce per sandwich)
-Dutch Crunch rolls
-desired amount spreadable butter (optional)


1. Preheat oven to 350˚F. Prepare ingredients by chopping the tomatoes, and tearing or chopping the lettuce. I roll the romain leaves up and using a sharp knife, chop the leaves into smaller chunks. Prepare the veggies as desired, place in separate bowls and place in the refrigerator until ready to use. Also have your shrimp thawed and tails removed at this time.

2. Prepare the Sriracha Mayo by mixing Mayo, Sriracha sauce and 1 tsp Old Bay Seasoning in a salad bowl and mix until combined. Place in refrigerator until ready to use.

3. When shrimp is thawed and tails removed, place on a paper towel and remove any excess liquid using a second paper towel to pat dry.

4. Place beaten egg in one bowl, and in a second bowl, combine Panko and plain breadcrumbs, Old Bay Seasoning and cayenne pepper (if using). Get a baking sheet out and spray it with non-stick spray.

5. Place a few shrimp in the egg, coating completely, and immediately place in the breadcrumb mixture to coat. Remove and place on baking tray, evenly spacing them out to get even coverage. Repeat with remaining shrimp until all are coated and placed on baking tray. Sprinkle any extra breadcrumbs over the top of the shrimp (as desired), and spray a light layer of non-stick spray over the top of the shrimp. This will give them a slight golden color.

6. Bake in preheated oven for 4 minutes, and using tongs, flip them over and bake another 4 minutes, or long enough to turn pink and get fully cooked with a golden look to the breadcrumbs. Remove and allow to cool while you broil the bread if desired.

7. Turn oven to broil, cut open the bread rolls, butter them up if desired, and broil in oven on top rack roughly 5 minutes, until golden brown. Remove and let cool slightly.

8. Assemble sandwiches with as much shrimp as desired, tomatoes, romain lettuce, and Sriracha Mayo as desired and devour immediately!!!
