Chili

Ingredients:

1 lb Hamburger meat
3/4 lb Mild Italian Sausage (or Turkey Sausage)
1 Red Bell Pepper Chopped (you can use 1/2 if prefer)
1 Green Bell Pepper Chopped (again 1/2 is fine)
1 onion chopped 
3 Garlic cloves pressed
1 jalepeno pepper seeded and finely chopped. 
1 can Bush's Chili beans in mild sauce (Pinto beans...not Kidney beans)
1 can fire roasted tomatoes
14oz crushed tomatoes (1/2 of the big can)
1/4-1/2 bottle of beer
1 1/2 -2 cups Beef Stock or broth
1 Tbsp Chili Powder
1 1/2 tsp Cumin
1 tsp dry mustard
salt/pepper
1 tsp Italian Seasoning
2tsps Brown sugar

Directions

  • Put a little olive oil in the bottom of a deep pot and brown the meat, then drain. Put a little more oil in the pot and sautee all vegetables (including jalapeno) and garlic until tender 5-7 minutes. 
  • Return meat to pot and season with chili powder, cumin, dry mustard, salt and pepper.
  • Add the beer to the pot and deglaze the bottom of the pan.  Stir and cook for approx 4-5 mins.
  • Add the beans, tomatoes, and broth and bring to a boil. Lower heat to medium and add Italian seasoning and brown sugar. More salt/pepper to taste if necessary.
  • Reduce heat to simmer and allow to simmer for at least 15-20 minutes. The longer you let it simmer the better it will be!
