CAN YOU COOK CUCUMBERS - TO PLAY COOKING GAMES.
Inspired by the Who needs tomatoes? cucumber gazpacho at City Girl Cafe in Cambridge,Mass. It is dee-lish and easy (so easy) to make. I improvised it mostly but used a recipe from The Voluptuous Vegan cook book as a rough guide for measurements, etc. Wanna make it? 1. Slice three pieces of stale white sourdough bread. Place two slices in a bowl and cover with water. Soak 'em for 5 mins and then squeeze the excess water out. Also, dump that nasty bread water out! 2. Peel and cut two medium cukes. 3. Toss half the cukes, half the bread and 1 cup of water in a blender. Process enough to break up the cukes into small pieces. You want it to be sorta chunky. Unless you like real chunky gazpacho, then stop blending when it reaches your chunky preference level. 4. Add in the rest of the cucumbers and bread. You can add more water at this point but I found that the cukies made enough water. 5. Chop up either one roasted sweet red pepper or, if you're like me and like the kick, two roasted chipotle peppers. (You can find these in a can but they come in a tomato based sauce. I rinsed that off and choppped them up.) 6. Chop up some scallions or onions (maybe 1/4 cup?), tear up some basil(about 1/4 cup or as much as you like), and a few mint leaves,two cloves of garlic and some cilantro. Toss in the blender. 7. Blend until semi-smooth. Season with salt and pepper. I threw in some dill, if you're into that kind of thing. Serve with (homemade, the best kind) croutons, chopped red or green bell peppers, sour cream (or soy sour cream) or really anything else you like.Can you believe ?
... that I cooked these ? Honestly, I would not have believed it. It toook me less than an hour including rice cooking to prepare about 30 sushi's... Smoked salmon and cucumber. beginners' sushis :-) Voila le resultat de moins d'une heure de travail........ cuisson du riz comprise.... je n'y croyais pas, j'en hallucine encore :-)... bonbon c'est vrai c'est des sushis pour debutants, et encore, ..... saumon fume et concombre... ( la mer c'est loin, je vais pas risquer la roulette rousse avec les poissonniers qu'on a par chez nous... )
