Why is pizza better from wood burning pizza oven? A wood-fired pizza oven heats up and cooks our meals a lot better because of the heat stored in the dense walls. This heat radiates across the dome very evenly while the floor of the oven is slightly cooler than the top under which we place our meals. When the oven gets really white hot inside, for certain type of pizza the baking temperature can be far above 300°C - 572°F or 350°C - 662°F and maintained by keeping a continuous small fire going. It's in this environment that a good pizza is made.

I brought back some real NY pizza dough to Austin. Heated up a cast iron skillet on the stove for 20 minutes along with the oven broiler for 20 minutes. Add sauce and cheese, and place on skillet and then immediately into oven. Make sure pizza is very close to broiler up top. Pizza will cook in 2-5 minutes. It's the only way to get the temperature of the pizza over the 500 degree limit of most home ovens. Pizza ovens cook at 800 degrees.
