Zucchini and quinoa soup



1 tablespoon of oil

(olive or sunflower oil)

1 little onion chopped

3 or 4 zucchinis (with peel) washed and chopped

3 cups of vegetable broth

1/2 cup  of quinoa

sal and pepper

2 tablespoon of cheese cream (like Philadelphia)

paprika powder

some pasrlesy or basil to garnish


In a saucepan heat the olive oil or sunflower oil and cook onion for two minutes, until tender,
add the chopped zucchini, add the vegetable broth, cover and simmer until boil.Occasionally stirring.

Add the quinoa as rain, season with salt and pepper. Stir and cook for 10 to 15 minutes or until the quinoa is cooked.

Add the cream cheese and stir.

Serve hot, sprinkle with paprika powder and garnish with parsley or basil leaves
