Ingredients (4 servings)
2/3 cup buttery cheese (grated)
salt and pepper
2 tablespoon corn oil or sunflower oil
1 little onion chopped
2 avocados peel and in slices
cilantro chopped for sprinkle
In a bowl mix the eggs and cheese, mix well and seasoned with salt and pepper, reserve.
In a sauce pan heat some oil and add the chopped onion until is soft.Let cool and add to the eggs batter. Mix well.
In the sauce pan put 1/4 of the batter mix and turn to coat the surface with egg mixture and cook over low heat for about two or three minutes.o until mixture thickens.
On this put a portion of avocado and fold the edges of the omelet over filling.
Remove from heat and repeat with the other omelettes Serve sprinkled with chopped cilantro.
