Mushrooms veggie burgers


3/4 cup of bulgur wheat

3/4 cul old fashioned oats

1 tablespoon of oil

1 med onion finely chopped

300 grs, mushrooms finely chopped
1 clove garlic crushed

1  medium carrot cut up

1/4 cup packed fresh parsley

1/2 cup cheddar cheese grated

1 tablespoon of panko crumbs

1 large egg white

salt and pepper

nonstick cooking spray

mashed avocado, tomatos in slices or lettuce


 Place in the microwave in a safe medium bowl, the bulgur and cover with water( about 1 cup of water) microwave on high 5 to 7 minutes or until liquid is absorbed.

Place the wet bulgur in a colander to drain  and set aside.

In a nonstick skillet toast on medium 3 minutes.Transfer to food processor.

In skillet hot oil on medium .Add onion cook about 6 minutes stirring .

Add mushrooms and garlic, cook by 5 minutes more until liquid evaporated stirring always.

In food processor with oats pulse carrot and parsley until finely chopped.

In a bowl place this mix and the mushroom mixture, bulgur, cheddar, egg white and add salt and pepper (about 1/2 teaspoon )  and finally the panko.

Make the burgers. Scoop 1/2 cup of mixture pat into round . Place in waxed paper .Repeat.

(Normally I make 6 burgers and freeze them)

You can freeze up to 3 months.

 To mine burger I add mashed avocado and tomato in slices.

 Note:  You can find Bulgur wheat in oriental stores or Supermarkets.
