1 cup all purpose flour(140 g)
1 cup whole wheat flour (140g)
1/4 teaspoon of salt
2 tablespoon of sugar
160 grs. butter in cubes
1 yolk egg
3 tablespoon of ice water
600 grs apples in slices
1 lemon the juice
1 cup of apricot jam
2 tablespoon of sugar to sprinkle
For dough. In a bowl mix the flour, salt and sugar, mix well.
Add the butter until coarse crumbs form.
In another bowl mix the yolk with ice water and add to the dough.
Knead making a dough ball.
If is necessary add some flour-
On a floured flat surface to place the dough and knead a few seconds until smooth.
Place in plastic wrap and refrigerate for one hour.
Prepare the filling.
Peel the apples and remove the centers cut into thin slices and sprinkle with lemon juice.
Spread the dough with a rolling pin and line a pie plate about 24 cm. sides of pan, leaving a little thicker.
Brush the base of the dough with apricot jam and distribute apples.
Sprinkle with sugar and brush the surface with the jam again.
Bake in preheated oven at 180 ° c for 30 to 35 minutes or until apples are tender and golden.
Remove from oven and brush with remaining apricot jam.
