chilenitos (alfajores with dulce de leche and merengue

 
 
Ingredients
Dough

1  1/2 cups all purpose flour

3 yolks

15 cc Pisco or rum

Filling

1 1/2cup of dulce de leche

Merengue

3 whites

pinch of salt

1 cup of glass sugar

1 teaspoon of cornstarch

1 teaspoon of vinegar


Method


In a bowl mix the flour, and add the yolks.Mix well with your fingers.Add the rum or pisco. You have to be a dough ball.

If is needed add some flour.

With a roll pin extend de dough in a floured surface.

With a round cookie cutter cut alfajores pinch  with a fork and place at  the oven.

Preheat oven to 190 ° c.

Cook by 10 minutes until are lightly brown.Let cool.

To fill with dulce de leche, first put on one side, spread with dulce de leche cover with another layer of alfajor and put back the dulce de leche, making three towers.


Make merengue

Whipp the whites and pinch of salt with an electric mixer until will be firm, add the icing sugar and beat well and then add the cornstarch and vinegar.

 With this merengue cover alfajores  and place on an oven tray, decorate with colored beads or leave white.

Carry oven for 15 minutes over very low heat (170°c)until the meringue is dry and puffed a bit, they should not brown.

Transfer alfajores to a rack and let cool completely.
