Blackberries soufflée

 

 

Ingredients (4 servings)
 3/4 cups of powdered sugar or icing sugar
 2 cups of blackberries frozen or fresh
1 large apple peel and pitted in slices or cubes
1 orange the juice and the grated peel
4 white eggs pinch of salt icing sugar to powder

 Method

Preheat oven to 180 ° c. Grease with a little butter on porcelain ramekins or bowls and sprinkle with sugar.

Prepare a cookie sheet.
In a medium saucepan cook the berries put a little water, sliced apples and ​​and grated orange, cook about 10 minutes until reduced to a pulp, stir it long over low heat .
Pass the mixture through a colander,  stirring with a wooden spoon. 
Reserve the  syrup and  add 1 / 4 sugar cup sugar and orange juice .
 let cool  mix and leave for a while.
 Apart beat with an electric machine whisk the egg whites with a pinch of salt still they are firm and add the remaining sugar to the mix and have a glossy and thick texture
 Stir in syrup and and  mix well .
And then with  spoonful  fill the ramekins.
 Smooth the surface with a knife and  pass the knife by inside  the  edge of each ramekin . Bake oven for about 15 minutes until well risen or until lightly browned
Sprinkle with icing sugar and serve to normal temperature.
