I've had this recipe parked on the hard drive for a while. This is a really nice recipe, playing on the way pork goes so well with fruit. I pulled it from a magazine originally but I can't remember which one. I've modified it since then so I'm not feeling too bad about that. This can be made alcohol free and still taste excellent. You will need: 2 lb pork loin olive oil coarse salt and pepper 1/4 c shallot or small onion diced 1 T tapioca starch or 1/2 T cornstarch 1 cup port wine, or apple juice 1/2 pound dried mission figs or fresh. If you only have dried figs, the previous day, cut the figs in half, put in a bowl and cover with the wine. This will soften up the fruit for cooking. You may end up using more than a cup of port for the recipe. Preheat oven to 450?, on the stove, in a ovenproof skillet, heat about a tablespoon of olive oil on medium high. Season the pork loin on all sides with salt and pepper. Brown on all sides in the pan, pour off all but a tablespoon of fat, then with loin still in the pan, slide into heated oven. Set timer for 25 minutes. When the timer goes off, check the loin for doneness. The thickest part of the pork should register 145? on an instant-read thermometer. If it isn't done check every 5 minutes until done. Transfer pork to a plate to rest and tent with aluminum foil. Put the (hot, very hot!) pan on the stove and add your chopped shallot. Be careful you keep the handle of the pan toweled or your hand gloved because it's a cruel burn you'll get forgetting it came out of the oven! Yes, I did this myself. Cook the shallots until softened, 2-3 minutes. Sprinkle in the tapioca starch, then gradually add the port, and finally the figs. Cook until the figs are warmed through and softening, and the sauce is thickened. If the sauce comes out too thick, add a little more port or water. You can also add any drippings from the roast after it has rested. Slice roast, spoon figs and sauce over, serve with your starch and veggies of your preference. Note: Mission figs are the dark figs. Combined with the port wine, these figs make for that rich, dark sauce. However, it will still be just as tasty with other varieties of figs and apple juice. Or any cheap red wine. I've done all the above and found it very tasty. Lastly, if you can't be bothered with the whole roasting process, I'm sure this fig sauce would be awesome over grilled chops or however you prefer to do up your pork cuts.

Very low carb/high protein: 1 (4-pound) boneless pork loin, with fat left on 1 tablespoon salt 2 tablespoons olive oil 4 cloves garlic, minced 1 teaspoon dried thyme or 2 teaspoons minced fresh thyme leaves 1 teaspoon dried basil or 2 teaspoons fresh basil leaves 1 teaspoon dried rosemary or 2 teaspoons minced fresh rosemary Directions Preheat oven to 475 degrees F. Place the pork loin on a rack in a roasting pan. Combine the remaining ingredients in a small bowl. With your fingers, massage the mixture onto the pork loin, covering all of the meat and fat. Roast the pork for 30 minutes, then reduce the heat to 425 degrees F and roast for an additional hour. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests.
