Buffalo Chicken Sliders Prep: 20 min Cook: 15 min Serves: 4 PPV: 8 1 small onion, finely chopped 1 red bell pepper, finely chopped 2 T. water 1 pound, ground skinless chicken breast 2 T. Buffalo wing sauce 1/4 t. salt 8 whole wheat mini buns 8 Lettuce leaves 8 slices of tomato 2 T crumbled lo-fat blue cheese Spray non-stick skillet or ridged grill pan with nonstick spray and set over medium heat. Add onion, bell pepper, and water, cook, covered, stirring occasionally, unilt liquid is evaporated and vegetables are very tender, about 8 minutes. Transfer to large bowl and let cool 10 minutes. Add ground chicken, wing sauce and salt, mix well. With wet hand, form into 8 (1/2 inch-thick) patties. Cover with plastic wrap and chill until firm, at least 1 hour or overnight. Spray skillet with nonstick spray and set over medium-low heat. Add patties and cook until instant-read thermometer inserted itno side of each burger registers 165*, 4-5 minutes each side. Split the buns; pull out some of bread from buns; top evenly with lettuce, tomatoes and blue cheese, and top halves of buns. Weight Watchers Magazine, May/June 2011. **These were really good. The veggies inside the burger really made them special. We grilled them instead of cooking them in the house. Really good flavor from that too. These are not spicy at all, so they are good, even for the faint of heart. I also didn't have blue cheese crumbles, so I used about 1 t. regular blue cheese dressing on each of my sliders. Definitely will be making these again.

Juicy, shredded chicken tossed in #FranksRedHot Sauce and butter and stuffed inside a wonton wrapper, and fried in canola oil for 30 seconds. Serve with a creamy, cool gorgonzola dip and celery. 4 pounds of cooked chicken meat (shredded with forks) 1 bottle of #Franks Red Hot Sauce (12 oz. original) 1 stick of butter 1 package of WonTon wrappers 1 cup of canola oil In a sauce pan on low heat, combine bottle of #Franks Red Hot Original sauce with one stick of butter. Add shredded chicken to sauce mixture. Spoon a heaping teaspoon of the chicken in the center of a WonTon wrapper. Dip your finger in water and wet two sides along the edge of the wonton wrapper and fold over to make a triangle. Press the sides tightly to seal. Heat a large skillet of canola oil on medium heat. Fry the WingTons for about 30 second. They will crisp very quickly. Remove and place on a paper towel. Serve with Bleu cheese or gorgonzola dressing and celery. Yields about 3 dozen WingTons. If you like Buffalo chicken wings, you will LOVE WingTons. They have all the flavor and texture of chicken wings, but without the skin. The crispy wonton wrapper mimics the crispiness of the chicken skin, minus the fat. It's everything you love about chicken wings with less fat, and without using a hundred napkins!
