Pumpkin/Carrot Cupcakes with Orange Cream Cheese Frosting 1 cup whole-wheat flour 1 cup all-purpose flour 2 teaspoons ground cinnamon 2 teaspoons baking soda 1 teaspoon salt 2 cups packed brown sugar ? cup vegetable oil 3 teaspoons grated orange peel, divided 1 can (15 ounces) 100% Pure Pumpkin 4 large eggs 2 cups grated carrots 3?4 cup golden raisins (I used Craisins instead--a brand name for dried cranberries) PREHEAT oven to 350° F. Paper-line 24 muffin cups. COMBINE whole-wheat flour, all-purpose flour, cinnamon, baking soda and salt in medium bowl. Beat brown sugar, oil and 2 teaspoons grated orange peel in large mixer bowl until blended. Add pumpkin and eggs; beat well. Gradually beat in flour mixture. Fold in carrots and raisins. Spoon batter into prepared muffin cups, filling 2?3 full. BAKE for 25 minutes or until wooden pick inserted in cupcake comes out almost clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely. 8 oz. soft unsalted butter 8 oz. soft cream cheese 1 box (1 lb.) powdered sugar 1 tsp. vanilla extract (I used about 1/4 tsp. of orange extract instead--you can use orange juice too, add a little at a time, mix and taste) BEAT cream cheese, butter, powdered sugar and remaining 1 teaspoon grated orange peel in small mixer bowl until smooth. 87 - Home-made Banana Bread (Almost non-fat) 45 - 1/2 Small banana 4 - 1 medium strawberry 2 - 1 tsp PROMISE spread -------------------------------------------------------------------- 2 cup whole wheat flour 2 egg white 3 large bananas 1/3 cup applesauce 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 1/2 tsp cinnamon 1/4 tsp nutmeg 1/4 cup splenda Preheat oven to 350 F Line parchment paper on a loaf pan Mix together, mashed banana, applesauce, egg white, cinnamon, nutmeg, Splenda, salt Sift together, flour, baking soda and baking powder Pour the wet mixture in the the dry mixture and mix well Bake at 350 F Degree for 40 minutes or until done Cut into thin slice (about size of sandwich bread). Serve about 18 slices. (I used Wide Silicone Loaf Pan) *I eat it with Promise Spread (5 calories).
