mmmm... a taste of summer for dinner tonight. Beef & Veg kebabs cooked on the grilling machine, with some grilled peppers, sweetcorn and salad. I had to cook them on the grilling machine, because the grill in the oven started giving off noxious fumes when I switched it on. It's not been used since we moved in, so I think it may be coated in cleaning product! Recipe from this month's diet and fitness with a few tweaks: 450g lean diced beef steak, marinaded for at least an hour, or overnight (2 crushed cloves of garlic, 2 tbsps soy sauce, 1 tbspn sweet chilli sauce). I alternated the meat with mushrooms and red onion. The original uses onion and pepper. An alternative for onion allergic people could be pepper and mushrooms. Serves 4 270 calories 4.8g fat (these figs may include the 150g boiled potatoes suggested in the original recipe).

Redolent with sweet potatoes and pecans, this moist loaf would make a great beginning or ending to any day. Here's the recipe: SWEET POTATO PECAN BREAD 2 1/3 cups sugar 2/3 cup water 2/3 cup oil 4 eggs, beaten 2 cups mashed sweet potatoes (fresh is best but canned will do) 3 1/2 cups flour 2 teaspoons baking soda 1 1/2 teaspoons salt 1 teaspoon cinnamon 1/2 teaspoon baking powder 1 cup coarsely chopped pecans Preheat the oven to 350. Combine the sugar, water, oil, eggs, and sweet potatoes mix good. Add dry ingredients and mix to combine; add pecans and mix well. Divide the dough into 2 greased loaf pans. Bake at 350 for 50 minutes. Cool in pans before removing. Source: Southern Chef in Louisiana
