Beets...they took a while for me to get used to. I had read once that they were the #1 food for losing weight, because they help digest fat. Well, I didn't think it was worth eating them then...but when I started having gallbladder/liver problems, I decided it was time to get cozy with them again. Beets in my opinion are one of the greatest Superfoods out there. My friends father came down with cancer of the liver...she asked his doctor what he should be eating and was given the reply of "whatever he wants.", almost as if it didn't matter since he was given anywhere from a few weeks to a few months to live. I feel it's wrong. The medical profession isn't very educated on nutritional therapy. Food IS very healing people...it's my mission this week to share with you the benefits of these Super foods and maybe you can include them in your diets and feel just as good as I have been lately. :-) The health benefits of beets include help with anemia, digestion, constipation, blood circulation, kidney disorders, skin care, dandruff, gall bladder disorders, cancer, and heart diseases. * It is believed that red beets when eaten regularly may help against certain oxidative stress-related disorders. * The fiber in red beets help reduced serum cholesterol by 30 to 40%. * Beets can help in normalizing blood pressure. * Beets helps to keep the elasticity of arteries, when consumed regularly it can help prevent varicose veins. * The iron content of red beets, though not high but is of the finest quality that makes it a powerful cleanser and builder of blood. Well, hate to tell you, but they taste like they look. :-/ I personally think they have an earthy, almost dirt taste to them, which can be cool if you remember liking the taste of dirt as a kid! I didn't.... You can get beets in a can, cut em up and add them to some mixed greens, goat cheese and a vinaigrette dressing. You can barely taste them in your salad that way, and a good way to trick yourself into eating them because let's face it, when you're in pain and THIS is what's going to make it feel better, then it's time to suck it up and eat them like an adult! (this is what I told myself) A friend of mine taught me to roast them, which made them very yummy and totally edible! Clean them well, cut the top and rat tails off :-) I don't peel them...so it's important to buy them organic. I quarter them, depending on how big they are...but you want them small enough for them to cook quickly. In a Pyrex pan, I add them with a diced shallot, olive oil, juice from a lemon and an orange, light salt & pepper and into the oven for about 45 min at 350*. You can use the juice from your ingredients in your salad and this version of the salad above is kicked up to a whole other level. Enjoy.139/365
13 pounds lost so far! I would like to lose another 8 (that would put me at my wedding weight at 24yo), but we'll see how long that takes. It has taken me 3-1/2 months to lose these 13 pounds. But I'm not on a diet, I'm just exercising a lot more & making better food choices. I didn't want to lose weight in a way that I couldn't maintain long term. I need realistic changes. I have had these shorts for years. They're my comfy around-the-house shorts. They were always roomy in the waist (which is why I love them) but have now gotten to the point where I literally cannot keep them up. I had to cinch the waist in & pin it to make them small enough to stay up. And yes, I know I could just pull the draw string tighter, but in all the years I have owned these shorts I have never once untied/retied that drawstring. So I like keeping it the way it is so I can use that as a measure for how big they are on me now compared to when I first got them & was much heavier.
