It's raspberry pickin' time here in Pennsylvania and yesterday's treat from my wife's kitchen was made from berries from our backyard garden. She set it out in the breezeway to cool off and I snapped a picture of it. It was fantastic! I recently read that raspberries are being talked about as a "super fruit." They contain a natural substance called ellagic acid, which is an anti-carcinogenic (cancer-preventing) compound. When eaten daily, they have been shown to lower high blood cholesterol levels and slow release of carbohydrates into the blood stream of diabetics. With that in mind, I mentioned to my wife that she might consider baking one a day! She lovingly grunted back something about me helping with the picking, cooking, and cleaning up! Fair enough, I thought ;-).
