Goat Cheese Stuffed Meatloaf

Perhaps the ultimate East meets West fusion recipe, this meatloaf dish was inspired by a sushi roll. By rolling the ground meat around a layer of goat cheese like a jelly roll, the cheese is layered into the centre of the meatloaf.
   
1 lb ground beef (I used ½ beef, ½ lamb)
½ cup bread crumbs
1 egg
¼ cup onion, chopped
1 tbsp. Worcestershire sauce
½ tsp. sea salt
1 tbsp. Dijon mustard
1 pkg goat cheese round, plain
2 tbsp. milk
1 tsp.  Italian seasoning (or parsley & oregano)
1 tsp.  chili powder
2 tbsp. ketchup or tomato paste
   
1. Preheat oven to 350°F. Prepare a loaf pan.                                  
2. Mix the 1st 7 ingredients together. Do not over mix. Pat meat mixture into a square (about 10") on a piece of plastic wrap, wax paper, or foil.                       
3. Put goat cheese in a small bowl and mix with butter and seasonings. Blend into a paste. Spread the goat cheese mixture across the top of the meat in a neat stripe (about 3" from the top).                     
4. Roll like a giant sushi roll (don't get the foil caught in the roll!). Gently place in a casserole dish. Spread ketchup or tomato paste on the top of the loaf. 
5. Bake at 350°F for about 45 minutes to an hour until done.
