Semi-Homemade Pumpkin Coffee Cake

Ingredients

1 Package of Pound Cake Mix {16oz package}

3/4 Cup of Canned Pumpkin

6 Tablespoons of Milk

2 Eggs

2 Teaspoons of Pumpkin Pie Spice

1 Teaspoon of Baking Soda


Optional Topping

1/2 Cup of Chopped Walnuts

1/2 Cup of Brown Sugar {packed}

1/4 Cup of Flour

3 Teaspoons of Butter {melted}


Directions

In a large bowl combine the cake mix, pumpkin, milk, eggs, pumpkin pie spice and baking soda. Mix on low speed to combine, then beat on medium for two minutes. Pour the batter into a greased 9 inch baking pan.

Optional topping: In a small bowl combine the topping ingredients: sprinkle on top the batter.

Bake at 350º for 30-40 minutes or until a toothpick inserted near the center comes out clean. 

Cool on a wire rack.
