Day One This recipe comes from BAM - Emeril Lagasse's Real and Rustic cook book. If I were to make this one again, I think I'd cut the amount of bacon in half (and I can't believe I'm saying that, but I wanted more cabbage flavor). Still very tasty and goes in the win column. Also? The crusty mini loaves I made to go with it were a great complement. Ham Hock and Cabbage Soup Ingredients 1 tablespoon vegetable oil 1/2 pound bacon, chopped 1 ham hock (about 1 pound) 1 cup chopped onions 1 cup chopped carrots 6 cups chopped cabbage (about 1 1/2 pounds) 3 tablespoons chopped garlic 2 bay leaves 1/2 teaspoon freshly ground black pepper 1 1/2 teaspoons salt 1/4 teaspoon cayenne 4 cups Chicken Broth 3 cups peeled and cubed red potatoes (about 1 pound) Instructions Heat the oil in a large deep pot over high heat. Add the bacon and fry until it is slightly crisp. Add the ham hock, onions, and carrots. Cook for about 2 minutes, or until the onions are slightly wilted. Add the cabbage, garlic, bay leaves, black pepper, salt, and cayenne. Cook for about 4 minutes, or until the cabbage is slightly wilted. Pour in the broth and bring to a boil. Reduce the heat to a simmer and cook, uncovered, for about 30 minutes. Add the potatoes. Cover and cook for 1 hour, or until the cabbage and potatoes are soft and tender. Remove the ham hock from the soup. Pick off the meat and add to the pot. Skim off any fat that has risen to the surface and remove the bay leaves.

1kg cooked potatoes 100 - 200 g tinned peas 2 hard boiled eggs 1 red onion 3 - 4 gerkins 2 marinated red pepers 150 - salamy 250g mayo (or white yogurt) Salt and peper how you like it. Instructions:Cook whole potatoes with their skin still on. Let the potatoes cool down and then peel them. Use a potatoe cutter to chop potatoe and hard boiled aggs into little pieces. Add the finely chopped onion, canned diced cucumber and red pepper and thinly sliced smoked pork sausage or ham. Add mayonnaise and mix. Salad has to be left in the cold at least for 12 hours. Mayonnaise can be replaced either wholly or partly with yoghurt. Salad thus gets a lighter touch and a slightly more interesting flavor.
