Italian Pot Roast
With parmesan risotto. Homemade - recipe courtesy of Williams Sonoma. After my long hiatus, I'm glad to be back in the kitchen. This was my first time making risotto and I love this recipe. It does however, take a bit of patience to make. The pot roast was a cinch since the slow cooker did most of the work (hehe) but it was very tender and juicy. Together, it was a nice and light dinner on a hot hot summer night.
Dinner in Queenstown (offhand, I could not remember the name of the restaurant but we were drawn in by the warm invites). The roast beef - my mate's order, was perfectly done. There was that bit of smoky char-ness that define a good roast but the succulence was sealed in and so the meat turned out moist and juicy...and needless to say, flavourful.
