Red Lentil Salad Ingredients: Red lentils Vidalia onions Garlic Carrots Fennel Nut Raisin Dried Fruit Trail Mixture/Combo Wine vinegar Olive oil Salt & pepper Garam marsala Curry Cinnamon For this batch, I chopped up 2 Vidalia onions and 7 cloves of garlic in the food processor, very fine chop. I put that in a big bowl with some wine vinegar, olive oil and salt on top. While chopping, I boiled a small pot of salted water (3-4 cups) with 2 cups of red lentils in it. When the lentils had actually boiled for about 3 minutes, I took them off the stove and drained the excess water. I then poured & stirred the hot lentils over the onions and garlic. This sort of “cooks” the onions a bit. Add a bit more olive oil and vinegar Meanwhile chop 7 carrots in the processor, add them to the lentil mixture… Next chop ? a fennel including fronds, maybe keep some fronds out for garnish…. Add fennel to the lentil mixture Stir in the garam marsala and curry…I used about ? cup of each for this size batch, also stir in some salt, pepper and cinnamon, maybe a tablespoon of each or to taste. Stir in about 14 ounces of mixed nuts/fruits whatever you like. I used cashews and almonds and dried fruits, cranberries and raisins. I saved some of a 16 ounce package for my cereal in the morning! Also add more vinegar and olive oil if the mixture needs some moisture. Mix well, you will have used about 3/4 cup red or white wine vinegar and ? cup olive oil for this recipe. This makes a lot of lentil salad, like enough to leave for your petsitters and to eat on top of a regular green salad for almost 2 weeks. It lasts nice long time in the fridge. The salad is high on the glycemic index, though I do not know the exact carb or calorie count. I will adjust my insulin intake to the salad based on my pre-meal blood test and how much I will eat. As a base, I will call it 30 grams of carb for 1 cup. Thank goodness for the insulin pump to figure out how much insulin I should use.august 26 - dinner
okay, so i was deciding if i should eat a mango or some nuts after the ~main course~ i had a mango earlier today and if i had another one, my carb intake would be soaring today. so i chose to have some nuts. it helped my fat intake, too! i eat so much fruits & veggies & oatmeal nowadays that my fat intake has been very minimal and it's not intentional either :( this is the reason why i have been eating REAL peanut butter lately instead of ordering another jar of PB2 because i really do need healthy fats in my life! please remember ya'll, fat from food DOES NOT equal fatty body! remember, everything in moderation. it's okay to eat fats as long as you're watching what you eat. i used to binge on these nut clusters like crazy and that's when it became a bad thing :/ ahaha. costco's kirkland cashew clusters! so good! they were hidden up in my closet, so they're a bit stale now ... and the fact that they expired like two months ago, oops, ahaha. it seems as if they've gotten smaller in size though :x 5 nut clusters = ~150 calories
