To the Potato Bread recipe we added 1 tsp of butter extract and 1 tsp of vanilla. It was going to be used as a sweet bread , so we wanted it to taste like one.
Potato Bread Recipe
6 cups flour
1 cup mashed potatoes (nothing added to the potatoes to mash)
1 cup potato water
1/2 cup butter (melted)
3/4 cup sugar
2 eggs w/ milk to make 1 cup liquid
2 tsps salt
2 pkgs yeast
1/4 cup warm water
1 tsp sugar
Boil potatoes until tender. Mash and add the 1 cup of potato water to a large bowl.
Add yeast to a small bowl with 1 tsp sugar and add the warm water.
Add the sugar, melted butter, and the salt to the mashed potatoes. Stir. When the potato water mixture is cool, mix in the yeast. Add the eggs and milk.
Add the flour a cup at a time and make a soft dough. Place dough on a floured surface and knead it about 10 minutes. Dough should be smooth and elastic.
Let dough rise in a warm place until doubled, covered. Knead a few minutes and divide the dough into 2 loaves. place dough ingreased bread pans and let rise, bake at 375 degrees for 30 to 40 minutes.
Homemade cherry filling:
The filling was made with out sugar, we wanted a sweet filling but not too sweet.
1 12 ounce bag frozen dark sweet cherries
1 cup water
3 tbls cornstarch
1/2 cup cherry preserves
I boiled the cherries for 10 minutes, I added enough water to the cornstarch to make a liquid, then added it to the cherries. If I would have had cherry extract I would have added it to the cherries, but I didn't, so I added 1/2 cup of cherry preserves to the filling.
The OTHER filling:
Carol has a filling that she uses in her Big Delicious Cinnamon rolls that's just perfect, we adapted it to use for this recipe, we eliminated the cinnamon and the brown sugar because we didn't want anything to compete with the cherry flavor of filling. We also cut back on the sugar because the cherry filling had preserves in it and we we going to frost with a cream cheese frosting. So the other filling went like this:
3/4 cup softened butter
1 egg white
1/4 cup sugar
Cream Cheese Frosting:
This is Carol's recipe , the one she uses for her Big Delicious Cinnamon Buns, I have never had a better Frosting!
1 cup confectioners sugar
2 ounces cream cheese, room temperature
3 tbls melted butter
1/2 tsp vanilla
The dough is made and let to rise the first time, both fillings are made, it's time to roll the dough out.
After the dough is rolled out the first filling to go on is the butter filling, then the cherry filling is spread all over that. Roll the dough up from the long side, loosely, you will have to slightly pick the dough up to roll it so the filling doesn't get pushed forward.
Cut the dough any size you want, place cut dough in a buttered 9x13 baking pan and let rise, covered in a warm place.
After the second rise, bake them in a 350 degree oven for about 25 minutes. When there done, immediately flip them out of the pan, I flipped them onto a cookie sheet.
After I flipped them onto the cookie sheet, I took a little more cherry preserves and spread them onto of the hot rolls to melt, you don't have to do this though. Then Finally I frosted them with the cream cheese frosting.
