ABOUT ME: I decided to start Buffet Counter for 2 reasons, one was that I was getting really disheartened by the same style buffet's at parties that I went to, I never fancied anything as it was usually sausage rolls and vol au vents straight from the freezer and quickly cooked in the oven, a lot of high fat, high salt and high sugar foods. I wanted to do something a bit more special, and what is more special than homemade food, nothing tastes as good, of course I still make things like sausage rolls for my customers but they are home made with fresh short crust pastry and locally bought sausage meat. I do not use artificial flavourings or colours, I have Menu's for different occasions and to suit different budgets but still on each menu everything is made from scratch by me. The second reason was that I wanted to be flexible enough to be able to spend time with my family, I also wanted variety at work and to be free to cater to my customers needs without being tied by set menu's with no flexibility.
I first started catering working at a local airport in Co Durham when I was 16, then I went to Darlington College of Technology and enrolled on a 1 year catering course course, I really enjoyed the course and ended up staying for another 2 years studying the Hotel, Restaurant and Catering Industry. Since then I have worked in Hotels, Pubs and Restaurants, Bakeries, Food Factories and Children's Nurseries, these have been in Co Durham, Lincolshire, London and Surrey. I loved catering but didn't like the unsociable hours once I had children so now I am self employed and Buffet Counter is my own business. I also have an up to date Food Safety Certificate and a Health and Safety Certificate.
