Makes 12 Cupcakes

Prep Time 40 minutes

Boston pie cupcakes for 12cupcakes

3 eggs whisk for 5 minutes !!!

1/2 cup sugar

1 cup all purpose flour

1 teaspoon baking powder

1/8 teaspoon salt

1/3 cup vegetable oil

1/2 cup whole milk

1/2 teaspoon vanilla extract

Bake at 325 degrees for 20 minutes

The most important cooking point to remember is not to over mix the batter or the cupcakes will be heavy and dense. The Boston Cream Cupcakes are a light and fluffy cake.

Custard filing

3 egg yolks

2 cups whole milk

1/2 cup sugar

1/3 cup cornstarch

1 teaspoon vanilla extract

2 tablespoons unsalted butter

To add the custard filling I used a pastry bag but a tablespoon works just fine.

Chocolate ganache topping

1/3 cup heavy whipping cream

1/2 cup semi sweet chocolate chips (4oz)

1 tablespoon corn syrup
