We are bringing her soup today. from Not Your Mother's Slow Cooker Cookbook. cooker: medium round or oval. settings and cook time: HIGH for 30 minutes, LOW for 6 to 7 hours, cream added during last twenty minutes. serves 6. 6 T (3/4 stick) unsalted butter, cut into 4-5 pieces 1 small white onion, chopped 3 leeks (white part and 1 inch of the green), washed well & thinly sliced three 10-ounce packages frozen artichoke hearts, thawed 6 C chicken broth salt & white pepper to taste 1 C heavy cream croutons (optional) for serving 1. Place the butter, onion, and leeks in the slow cooker. Turn to HIGH, cover, and sweat the vegetables for 30 minutes. 2. Add the artichoke hearts and broth, cover, and cook on LOW for 5 to 6 hours. 3. Puree with a handheld immersion blender or transfer to a food processor or blender and puree in batches. Strain the soup by pushing it with a spatula through a large-mesh strainer to remover any fibers. Season with salt & pepper. Return the soup to the cooker, stir in the cream, cover & cook on LOW until heated through, abuot 20 minutes: do not boil. 4. Ladle the hot soup into bowls and garnish with croutons, if desired.
