Thai Pumpkin Soup preparation: 10 minutes • processing: 25 seconds • yield: 8 cups (1.9 l) 2 tablespoons (30 ml) olive oil 1 large onion, peeled, chopped 1 tablespoon tomato paste 2 1/2 cups (610 g) canned pumpkin 2 tablespoons of fresh ginger 1 garlic clove, peeled, chopped 3 cups (720 ml) chicken or vegetable broth 1 tablespoon chopped green chilies 3/4 cup (180 ml) coconut cream 3/4 cup (180 ml) coconut milk 1 tablespoon lemon juice salt and pepper 1. Saute onion in olive oil until soft. Add tomato paste, pumpkin, ginger, garlic and broth. Combine until thoroughly heated through. 2. Place mixture into the Vitamix container. Add chilies, coconut cream, coconut milk,and lemon juice and secure lid. 3. Select Variable 1. 4. Turn machine on and quickly increase speed to Variable 10, then to High. 5. Blend for 25 seconds. 6. Season to taste with salt and pepper. 7. Garnish with chopped cilantro, chopped peanuts and sour cream if you desire. Notes This recipe can be reduced by half and made in smaller containers. This recipe contains coconut cream and coconut milk. If a less sweet soup is desired, omit coconut cream and increase coconut milk to 1 1/2 cups (360 ml). The nutrition information above is based on using coconut cream. Made this last week. Thai style chicken soup. Got the recipe from America's Test Kitchen. This soup turned out OK. Couple of problems: 1) The recipe said to use 2 cans of coconut milk. So it turned out slightly too creamy for my tastes. 2) I didn't think the recipe would make such a HUGE pot. So I didn't put enough chicken and mushrooms in it. So it was mainly soup. Sadly, I had to toss most of it several days later since I was the only one drinking it & I was getting really sick of drinking the same creamy soup 3 days in a row. =P
