Multi-Grain Blender Pancakes

This recipe is slightly adapted from Desi at Unconventional Kitchen


1/4 cup oil or melted butter

1/2 teaspoon salt

1/2 cup old fashioned rolled oats

2 cups milk

2 eggs

1/4 cup sugar

1 tablespoon baking powder

2 cups whole wheat flour


1. Combine all ingredients in the canister of a blender; pulse a few times to start to combine. Blend on high for 20-30 seconds and scrape down the sides of the canister if needed. Blend on high another 30-45 seconds or until the batter is thick and smooth.


2. Cook on your waffle iron according to the manufacture's directions. Serve immediately and freeze any left-overs for best quality waffles later.


Makes about 20 4-inch waffles.
