Salted Toffee Blondies

Makes 16 small squares

1/2 cup (1 stick) butter, melted
1 cup dark brown sugar, packed
1 egg
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup toffee pieces (we used crushed Skor bars)*
Sea salt, for sprinkling

Preheat the oven to 350 F.  Butter an 8x8 square baking pan and set aside.

Stir together melted butter and sugar in a large mixing bowl until smooth.  Add in egg and vanilla and mix until combined.  Add flour, baking soda and baking powder to bowl and stir until all ingredients are incorporated, scraping down the sides of the bowl as you go.  Add in toffee pieces.

Pour batter into pan, sprinkle all over with sea salt and bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.  Allow blondies to cool completely on a rack before cutting. 

*You can tailor these blondies to your own personal tastes and add in whatever you like.  Nuts, chocolate chips, dried fruit or any combination of works wonderfully.  Be careful when using chocolate though, if you use too much (who knew there was such a thing), the blondies may not cook through in the same amount of time.
