S'Mores Cookies

Makes about 24 cookies in a whoopie pie pan
Adapted from My Baking Addiction 

2 sticks unsalted butter, softened
1 cup packed light brown sugar
3/4 cup granulated sugar
2 large eggs, room temperature
1 tablespoon pure vanilla extract
4 cups all-purpose flour
1 teaspoon kosher salt
1 1/2 teaspoons baking soda
1 1/2 cups semi-sweet mini-chocolate chips
2-3 full size graham cracker sheets, roughly chopped
3 full size Hershey chocolate bars, broken into pieces
6-7 large marshmallows, cut into fourths

Preheat oven to 350 degrees Fahrenheit. Place butter and sugars into a stand mixer and beat until light and fluffy. Add the eggs one at a time and then the vanilla extract until well combined.

Sift together flour, salt and baking soda in a large bowl. Then, slowly add the dry mixture into the butter-sugar mixture until barely combined. Fold in the chocolate chips. 

Scoop heaping tablespoons of cookie dough into the whoopie pie pan. Press gently down on the dough to flatten and stick pieces of Hershey's chocolate, graham cracker and marshmallow on top of each dough disc.

Bake for 13-15 minutes or until the edges are turning brown and the marshmallows are getting a golden glow. Let cool 5 minutes before removing from the pan and cooling further on a wire rack. 

PS- We think you could actually make these into whoopie pies of sorts by squishing fat blobs of marshmallow fluff between 2 cookies...delish!
