Tortellini Vegetable Soup


  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 3 carrots, peeled and chopped
  • 1 can diced tomatoes
  • ½ tsp. dried oregano
  • 4 cups vegetable or chicken broth
  • 1 bunch fresh spinach, rinsed and roughly chopped
  • 1 package (12 oz.) cheese tortellini (fresh or frozen)
  • salt and pepper


  1. In a large pot, heat the olive oil over medium-high heat. Add in the chopped onion and carrots.
  2. Cook for 5-7 minutes, until vegetables are starting to soften, then add in the garlic and cook for 1 minute more.
  3. Stir in the tomatoes, oregano, and broth; bring to a boil then reduce heat and cook for about 20 minutes, until all the vegetables are soft. Stir in the fresh spinach, and tortellini. Add salt and pepper to taste.
  4. Cook for 15 minutes more
