Tortellini Salad

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 Tablespoon honey
  • 1/3 cup chopped flat leaf parsley
  • 1 cup grape or cherry tomatoes
  • 1/2 cup olives
  • 1 (14-ounce) can artichokes (I used marinated)
  • 1 package cheese tortellini

Directions

  1. Cook the tortellini according to the package directions.  Drain.
  2. Combine vinegar, salt, pepper, and honey in a bowl.  Whisk in olive oil.
  3. Toss parsley, tomatoes, olives, and artichokes in the dressing.
  4. Gently toss with the rest of the ingredients. Chill in the fridge for one hour or until ready to serve.
