S'mores Bars

  • 1/2 C butter , softened
  • 3/4 C sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/3 C flour
  • 3/4 C graham cracker crumbs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3-4 milk chocolate candy bars ((1 5/8 oz., Hershey's recommended)
  • 3 C miniature marshmallows, or 3 C regular marshmallows, cut in half


  1. Heat oven to 350F. Line an 8x8 inch baking pan with parchment paper and/or butter.
  2. In a large mixing bowl, beat butter and sugar together until blended. Add egg and vanilla and beat well.
  3. In another bowl, mix flour, graham cracker crumbs, baking powder, and salt. Add to butter mixture, beating until well blended.
  4. Press half the dough into the prepared baking dish, and bake for 15 minutes.
  5. Unwrap chocolate bars and arrange in an even layer over baked layer.
  6. Top with marshmallows, and scatter remaining dough over the marshmallows to form a top layer.
  7. Bake 10-15 minutes or until just lightly browned.
  8. Cool completely before cutting, as the marshmallows will make it sticky. I recommend waiting overnight to cut into them.
