Pineapple Couscous

Ingredients

  • 1 C uncooked couscous
  • 3/4 C chicken broth
  • 1 can pineapple bits (drained)
  • 4 scallions, chopped
  • 1/4 C red onion, chopped
  • 1/4 C carrots, chopped
  • 1/4 C pecans, chopped
  • 2 tablespoons oil (I used sesame)
  • 2 tablespoons soy sauce
  • salt & pepper, to taste

Directions

  1. In a sauce pan, bring chicken broth to a boil.  Add cousous, cover, and remove from heat.  Let stand for 5 minutes.
  2. In a small bowl, whisk oil and soy sauce with salt and pepper. 
  3. Fluff couscous with a fork, and add all other ingredients. 
  4. Toss well with oil & soy sauce mix.
