Monterey Chicken


  • 4 boneless chicken breasts
  • 1/2 C BBQ sauce
  • 8 slices crispy bacon
  • 1/2 C sharp cheddar cheese
  • 1/2 C Monterey Jack cheese
  • 1 Roma tomato, seeded and diced
  • 2 tbsp fresh chives, chopped
  • salt and pepper, to taste


  1. Season chicken breasts with salt and pepper.  Sauté in skillet until chicken is cooked through. 
  2. Mix cheeses to create a “blend” of flavors. 
  3. Place chicken breasts on a broiler pan.  Divide the BBQ sauce evenly on top of each breast.  Next, add two slices of bacon per breast, and top with cheese blend.
  4. Broil chicken in the oven until cheese is golden and bubbly.
  5. Top each breast with chopped tomatoes and chives. 
  6. Serve atop Lime Cilantro Rice.
